The First Step is Prevention

Many commercial kitchens bustle with activity. Servers race back and forth with hot plates while chefs whip up order after order over scorching equipment. Commercial kitchens are at risk of fire-related injuries and damage from deep-fat fryers and griddles, as well as range tops and broilers.

Although your suppression system is equipped to put out a fire, there are many things that a restaurant can do to prevent them in the first place.

Have an Action Plan

Accidents and fires can still damage even the best-trained kitchens. It is crucial to have an emergency plan. These are some tips that will help you keep your customers, employees, and property safe in the event of a fire.

A power-down plan should be in place. A minimum of one person per shift should be trained to turn off gas and electrical power in an emergency.

Not only should kitchen employees be familiar with safety protocols for deep fryers and griddles, but they must also know how to use fire extinguishers, how to call an emergency number, and how to give basic first aid. Each year, staff members should receive refresher courses.

Prepare an evacuation plan. One staff member per shift should be designated as the evacuation manager, similar to the power-down plan. This person will decide when evacuations are necessary and how to evacuate everyone safely.
